Yummy Madia Parotta

Ingredients:

Maida(All purpose Flour)- 3 cups
Salt- Required amount
Water- As needed to make dough
Oil- 3-4 spoons

Method
Mix Maida, salt in bowl. Add oil and fix it. Then add the water and make a soft dough.

Trick:
Beat it well by adding little oil in between. Repeat the tricks to get the smooth dough.



Apply oil and keep aside 1  hours in closed container.Make a ball of big lemon size.

After 1.30 hr flatten the ball into thin paper sheet with help of roller.


Once the dough is flatten, lift and fold it like sari pleads from one end to another. Now rotate the dough and make a spiral dough as shown below. Apply oil and rest it for 10 min.

Carefully flatten the spiral dough  using rolling pin. You can see th layers in the dough now.Don't roll into very thin bread.


Heat pan and cook the parotta till turns golden browns on both sides by applying enough ghee or oils.

Once the parotta's are cooked, arrange 3 parotta on surface and beat the parotta with your hand. It  helps to get more layers.

Now yummy parotta is ready serve with vegetable kuruma or chicken cury.

Crispy and Traditional Rava Dosai

Ingredients

Riceflour-1 cup
Rava - ½ cup
Maida- ¼ cup
Salt to taste

For seasoning

Mustard seeds- ¼ tsp
Green chillie-1 chopped finely
Pepper- a few
Curry leaves- a few
Ginger- a small piece chopped finely
Coriander leaves- a few chopped finely
Onion- ½ chopped finely
Oil and ghee

Method

Mix the rice flour, maida and rava and add water and salt to it. The batter should be watery and flowing. Heat 1 tsp of oil in a pan and add mustard seeds, when it splutters add onions and all other ingredients .Fry for till the onion turns golden brown. Add this to the rava batter.
Heat the dosai pan (the tawa should be very hot while u are pouring the batter) and take one ladleful of batter and spread on the tawa starting from the sides and finishing off in the middle as rava dosa cannot be spreaded like ordinary dosa. Drizzle ½ tsp of oil and ¼ tsp of ghee on the sides. When it becomes golden brown turn it over.

While pouring the batter, pour at 5 inche height to get the traditional crispy rava dosa

Yummy and crispy rava dosa ready serve with coconut chuttney.

Popcorn chicken fry

Ingredients
250 gm boneless chicken
1 egg
1/2 cup corn flour
2 tsp garlic ginger paste
salt
1 tsp Turmeric powder

If you don't want egg you can use curd.


Method 1:

Mix together the chicken, egg, corn flour, garlic and ginger paste, salt and enough water so that the chicken pieces are 'coated' with the batter.

Keep aside for 1/2 hour.

Heat the oil and deep fry the chicken pieces over high heat to begin with and then lower the heat till chicken is cooked through.

Drain on absorbent paper and serve.

Method 2:

If you have ample amount time. Cook this in dosa fry pan to reduce oil.

Easy Radish Stuff Paratha Recipe.

Prep Time: 5 mins    |  Cook time: 15 mins

Ingredients
Grated radish - 3/4 cup
Red chilli powder - 1 & 1/4 tsp
Garam masala powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Jeera/ cumin seeds - 1 tsp
Salt - As needed
Oil/ ghee  - As needed
Wheat flour/ Atta - 1 cup


Method for preparation Stuff
Peel and grate the radish in a grater and mix salt with it, keep aside for 5 mins.
Remove the water a bit. Use squeeze out for preparing dough as per requirement.Mix all the stuffing ingredients in bowl. For making the stuffing dough use the squeezed out water.

Now make equal size small ball of it. Roll out to thick parathas. Not too thick, just with 2 chapathi’s thickness. Dust generously with flour while rolling out. Heat the pan and cook on both sides by applying a little ghee each sides, until golden brown spots appears.

Ingredients for stuffing

Egg- 4
onion-1
tomoto-1
chill powder-1 spoon
Salt- Required Amount
Garlic Ginger-1 Spoon

Mustard
curry leaves

Ingredients for dough
Maida- 1 cup
Salt required amount



Egg Momos

Put 1 cup of maida add spoon of oil, salt and required amount water to make dough.

And keep close the dough container for 15 minutes.


Stuffing preparation method:

Take a pan put oil, allow to get heated. Later on add mustard and curry leave.Wait still it get spluttered. Add garlic onion,tomotoes,chill powder and tumeric powder. Heat it till the raw smell goes out.

Later add eggs and fry to half fried stay. Now off the stove.



Momos Prepartion

Roll dough into small balls. Flat it like a thick paper. Now keep the egg stuffing in center. And roll and tie it at top like chocolate cover. Repeate the same method for all other balls.


Now take idly baking vessel to bake the momos in steam.

Steam it for 10 to 15 minutes. Your yummy Egg momos is ready.

Ingredients Required

Nethili Karuvadu-250g
TOmatoes-2
Onion-2
Chilly Powder-2 1/2 spoons (Based as per Spiciness)
Turmeric Powder-1 1/2 spoons
Mustard seeds-2 spoons
curry leaves
oil
Nethili Karuvadu Fry


Preparation method:

Chopped the tomatoes & onion finely.
And wash the Nethili Karuvadu(Dry fish) in water.
Then heat a pan with oil.And then add mustard seeds,curry leaves. After seeds get splutter add chopped onion and tomatoes,turmeric powder.Fry it well still the raw goes.

Now add Nethili Karuvadu and chill powder and pure water till the dry fishes get soaked.

Close the pan and keep it for 10 minutes.Then check whether dry fish is cooked or not.If so, now little amount oil and stir it well to get thick gravy.

At last add coriander leave and sever Nethili Karuvadu shallow gravy.

Just 15 Minutes Prepare Cabbage Chutney

Ingredients Required

Cabbage shredded or chopped -1 cup
Onions -1/2 cup chopped
Ginger -1/2 inch piece
Green chilli -2
Tomato -1/2 cup
Curry leaves -few

Tamarind - a small bit or 1/4 tsp
choped coconut Pieces-10 small pieces


For the seasoning

Oil -2 tsp
Mustard seeds -1/2
Urad dal -2 tbsp
Red chilli -1
Hing/asafoetida -a pinch

Top up seasoning

Oil -1 tsp
Mustard seeds -1/2 tsp
Curry leaves -few


Method:

Heat oil,add Mustard seeds,when it splutters add urad dal & red chillies.Fry it till gets golden brown & then add chopped tomatoes,ginger,onions.

Fry till it get half cooked. Then add chopped cabbage,cook till the raw smell goes.

Then cool the cooked mixs. Then grind the cooked mix by adding salt to taste.And transfer the cabbage chutney to a bowl.

Now keep a pan and a little amount of coconut oil or refined oil and heat it.

Add the mustard seed, when it gets splutters, add urdal dal and curry leaves and hings. Put this fries over the chutney and mix it well.


Now taste the Cabbage chutney with your favorite idly,dosa or White plain Rice.

Easy & Instant Flattened Rice Mixture

Ingredients

  • 4 cups Flattened rice
  • 100g cup Ground nuts
  • 100g Roasted Bengal grams
  • 50g Black gram(peeled off white color)
  • 50g Soaked & dried green gram
  • white pepper powders
  • Required Amount of salt
  • Little amount of coconut Oil for drying
Instant Flattened Rice Mixture


Method

Keep a dry pan and pure 250g of coconut oil. Heat it in a low flame. After oil gets heated, Put one hand of flattened rice and fry it. Take it back it becomes puffed rice(white color). And then fry the groundnut and black grams to a golden color.


Now mix all the fried items in a pan with required amount of salt and pepper.

Paal Kozhukattai is a very popular Tamil Nadu sweet/dessert prepared with Sugar and milk.This is an authentic recipe in which the dumplings are prepared by soaking and grinding rice. It tastes great and is simple to prepare. Today we will learn how to prepare Paal Kolukattai following this easy recipe.


How to make Pal Kozhukattai

Prep time - under 15 mins
Cook time - under 30 mins
Serves - 2

Ingredients needed for Rice balls

Parboiled rice - 1/2 cup
Salt a pinch
Ghee - 2 tsp

Ingredients needed for Sweet sauce
sugar - 3/4 cup
Thin milk - 2 cup
Cardamom powder - 1/4 tsp

Preparation of sugar syrup

Wash and soak rice for 2 hours. Grind it to a fine paste adding little water and a pinch of salt. Rinse the mixie with little water and add to it.

Melt sugar adding 2-3 tbsp of water in low heat.Once it melts, switch off the flame and filter it to remove any impurities.

Method for preparing Pal Kozhukattai dough

Take a kadai or pan (preferably non stick) pour the batter, melted ghee and switch on the flame. In medium heat, keep stirring the rice batter continuously to prevent formation of lumps until it starts to leave the sides of the pan. Switch off the flame.


Pal Kozhukattai Recipe

When it is warm, grease your hands with a little ghee and knead it to soft pliable dough.(keep the dough covered with a damp cloth to prevent it from drying. The dough will not stick to your hands, if it is cooked well.

Make small balls like gooseberry out of it and keep it ready.(that's a close up shot of the ball, so it appears big). If the ball are big, they will take more time to get cooked and they will taste bland in the dish. So make small sized balls.

Boil 1 cup of thin milk, when it starts boiling, reduce the flame and add the balls gently.The balls should be immersed in the thin milk. If not, add more thin milk. Do not stir it for the first few minutes. Then stir gently and cook in medium low flame for 5-6 minutes or until done. (the balls will change color and start coming to the surface when they are cook. You can even taste the rice ball and check if they are cooked)

Now add the thick sugar water, cardamom powder and cook for a few more minutes until it becomes slightly thick and saucy.

It will thicken a little as it cools down. Enjoy Pal Kozhukattai warm or cold!!

Ingredients for Dough

  •     1 cup Refined flour (maida)
  •     3/4 cup Gram flour (besan)
  •     Salt required amount to get the taste
  •     Turmeric powder just to add color so, put 1 small spoon amount
  •     3/4 teaspoon Red chilli powder
  •     4 tablespoons Oil
  •     2 spoons sugar

Ingredients for Stuffing Mix
  
  •     1 tablespoon Poppy seeds (khuskhus/posto)
  •     1/4 cup Sesame seeds (til)
  •     1/4 cup Dry coconut (khopra) grated(optional)
  •     1/2 cup Ginger chopped
  •     3 spoon Coriander powder
  •     1/2 tablespoon Cumin powder
  •     1/2 tablespoon Asafoetida
  •     5 spoons of sugar
  •     Little salt


Method
Step 1
Mix together refined flour, gram flour and salt in a bowl. Add turmeric powder, red chilli powder and oil. Add sufficient water to make a stiff dough. Keep it for 10 Minutes.

Step 2
Dry roast grated dry coconut and roast poppy seeds & sesame seeds after roasting coconut.Then after 10 minutes,Grinder all the roasted ingredients along with chopped ginger, coriander powder, cumin powder, Asafoetida and sugar.Grinder it finely and keep separately in a bowl.

Step 3
Divide the dough into eight equal portions. Roll out thinly. Spread a portion of the stuffing mixture. Roll into thin long flute shapes.

Step 4
cut flute in horizontal into small and equal pieces.

Step 5
Heat sufficient oil in a kadai and deep-fry the pieces on medium heat till golden brown and crisp.

Step 6
Drain onto an absorbent paper. Serve hot or cold.

Chicken Tikka Biryani Recipe



Ingredients for making chicken Tikka
·         1 kg Chicken
·         1 teaspoon red chili powder
·         1 tablespoon ginger-garlic paste
·         1 teaspoon ground black pepper
·         1⁄2 coriander powder
·         1 teaspoon garam masala, ground
·         1/2 teaspoons salt
·         1/2 cups of Thick curd
·         1⁄4 teaspoon food coloring (orange or yellow)


For frying Chicken method:

Take chicken, First wash in clean water with lemon drop. So, those bacteria will be killed. Then put that into a big vessel. Add 2 spoons of chill powder, 1 spoon of ginger-garlic paste,1 spoon of black pepper powder,1/2 coriander powder,1 cup of curd and small quantity of water. Mix the paste and chicken. so, that the Masala pastes are equal applied over the  chicken pieces. And leave it for 10 minutes.

Then, heat oil in a pan. And fry all the chicken pieces in low heat.

INGREDIENTS FOR BRIYANI
·         1/2 kg of soaked rice in cooker.
·         1 tablespoon ginger-garlic paste
·         Little amount mint & coriander leaves paste
·         25g green peas
·         4 chopped tomatoes
·         5 green chilies (finely chopped)
·         4 spoons of curd
·         1 1/2 spoons of salt
·         Fried chicken
·         1/2 spoon of turmeric powder
·         1 cup of refined oil and 1 spoon of coconut oil.
DIRECTIONS

Then add oil in a pressure cooker and put the mustard and all ingredients for making Briyani except rice and fried chicken. Fried well. Then add the soaked rice and steer it well. Then add fried Chicken Tikka and mix it well. A add 500ml of water and close the lid of cooker. Keep up to 2 whistles.
Finally wait till steam get cooled down.At last add a 3 drops of lemon not more than this.

Banana Halwa

  Ingredients

  • 10 ripe bananas
  • 5 spoons of ghee
  • 1 cup sugar
  • 1 tsp cardamoms (chhoti elaichi)
  • Color powdered  
Method
Peel the bananas and slice into small rounds.And grind it using mixi to a fine liquid state.Keep the pan in stove.Heat the ghee and add the Bananas Mix.Add sugar and enough color powder to get texture.
Cook over low heat till the liquid thickens when you lift it and drop, it should fall in drops and not a stream.
Add the cardamom, cashew nut and serve. If you wish you can add other nuts like Badam,Pistha. Don't add grapes.This will becomes thicker when it gets cool. Ghee Banana Halwa is ready.
